Banana Fritters
Ingredients
- 4 very ripe bananas, peeled
- 2 cups self-rising flour
- 1/2 cup sugar
- 2 eggs
- 1/2 cup milk
- 1 cup vegetable oil
- 1/2 cup confectioners sugar
Directions
- Mash bananas and set aside.
- Sift flour into a bowl. Add the 1/2 cup sugar and stir well.
- Add eggs and mix well.
- Slowly add milk. Beat until batter is smooth.
- Stir in bananas.
- Heat oil over medium fire.
- Drop spoonfuls of batter in hot oil.
- Fry fritters about 5 minutes per side until brown.
- Drain on a paper towel.
- Sprinkle with Confectioners Sugar.
- Enjoy.
