Bran Muffins
Ingredients
- 5 Cups Plain Flour
- 3 Cups Sugar
- 1 Cup oil
- 1 qt. Buttermilk
- 1 15 oz. box Post raisin bran
- 5 tsp. Baking soda
- 2 tsp. Salt
- 4 eggs
- 2 tsp. Vanilla
Directions
- In a very large bowl, combine the flour, sugar, baking soda, and salt.
- Stir in the entire box of raisin bran cereal.
- In a separate bowl, beat the eggs, then mix in the oil, buttermilk, and vanilla.
- Pour the wet ingredients into the dry ingredients and stir just until combined.
- Fill greased or paper-lined muffin tins two-thirds full.
- Bake at 400°F for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
Notes
- The batter can be covered and stored in the refrigerator for up to six weeks.
