Bran Muffins

  1. In a very large bowl, combine the flour, sugar, baking soda, and salt.
  2. Stir in the entire box of raisin bran cereal.
  3. In a separate bowl, beat the eggs, then mix in the oil, buttermilk, and vanilla.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined.
  5. Fill greased or paper-lined muffin tins two-thirds full.
  6. Bake at 400°F for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
