Eggplant Dressing

Ingredients

• 1 lb Hamburger Meat
• 1 medium onion
• ½ medium bell pepper
• 1 large eggplant
• 3 or 4 slices bread crumbs
• 1 egg

Directions

1. Boil Hamburger Meat, onion, and pepper in a small amount of water.
2. Peel eggplant, chop, and boil in a small amount of water until tender. Mash.
3. Add to the hamburger mixture. Add bread crumbs, egg, and a little butter.
4. Place in a baking dish and top with bread crumbs. Bake.
