Italian Eggplant Casserole

Directions

  1. Slice Eggplant and soak in salt water for about 1 hr.
  2. Coat eggplant with flour and fry in Olive Oil or Cooking oil until lightly brown.
  3. Mix tomatoe sauce, oregano, garlic, basil, sugar, and black pepper.
  4. Line a casserole dish with the fried eggplant and pour the tomato sauce mixture over it.
  5. Grate Mozzarella Cheese or optional Cheddar cheese over the casserole.
  6. Bake at 425°F until done.
  7. Serve over pasta.
