Italian Eggplant Casserole
Ingredients
- Eggplant
- Salt
- Flour
- Olive Oil or Cooking oil
- Tomatoe Sauce
- Oregano
- garlic
- basil (dash)
- sugar (dash)
- black pepper
- Mozzarella Cheese
- Cheddar cheese (optional)
- Pasta (for serving)
Directions
- Slice Eggplant and soak in salt water for about 1 hr.
- Coat eggplant with flour and fry in Olive Oil or Cooking oil until lightly brown.
- Mix tomatoe sauce, oregano, garlic, basil, sugar, and black pepper.
- Line a casserole dish with the fried eggplant and pour the tomato sauce mixture over it.
- Grate Mozzarella Cheese or optional Cheddar cheese over the casserole.
- Bake at 425°F until done.
- Serve over pasta.
