Old-fashioned Teacakes

  1. Cream butter; gradually add sugar, beating well.
  2. Add eggs, one at a time, beating well after each addition.
  3. Add buttermilk, and beat well.
  4. Combine flour and soda; gradually stir into creamed mixture.
  5. Stir in vanilla.
  6. Chill dough several hours or overnight.
  7. Roll dough to 1/4-inch thickness on a lightly floured surface; cut into rounds with a 3 1/2-inch cookie cutter.
  8. Place 1 inch apart on lightly greased cookie sheets; sprinkle with sugar.
  9. Bake at 400° for 7 to 8 minutes or until edges are lightly browned.
  10. Remove cookies to wire racks, and let cool completely.
