$100 Cookies
Ingredients
- ½ cup butter or margarine
- ½ cup solid white shortening
- 1 ½ cups sifted confectioners’ sugar
- 1 ½ teaspoons vanilla
- 1 ½ cups all-purpose flour (fork-stir to aerate before measuring)
- 1 ½ cups cornflakes
- 1 cup coarsely chopped pecans or walnuts
Directions
- Cream the butter, shortening, sugar, and vanilla.
- Add flour and mix well.
- Stir in cornflakes. Cover and chill.
- Shape into 2 equal rolls, each about 1 ½ inches in diameter. Coat with nuts; wrap tightly and chill overnight.
- Cut into ¼-inch-thick crosswise slices.
- Place several inches apart on an ungreased cookie sheet.
- Bake in preheated 350°F oven until lightly browned, about 15 minutes.
