Sandwich Spread
Ingredients
- 12 Bell Peppers
- 12 green tomatoes
- 6 large onions
- 1/2 Cup Salt
- 2 C. Vinegar
- 2 C. Sugar
- 1 C. Flour
- 1 tsp Turmeric
- 1 Tsp Mustard
- 1 tsp black pepper
- 1 qt Mayonnaise
Directions
- Grind the bell peppers, green tomatoes, and onions.
- Let the ground mixture stand in 1/2 cup of salt.
- Drain the mixture well.
- Cook the drained vegetables until tender.
- In a separate pot, bring the vinegar and sugar to a boil.
- Make a paste with the flour, turmeric, mustard, and black pepper with a little water.
- Whisk the paste into the vinegar and sugar mixture.
- Pour the sauce over the cooked vegetables.
- Cook until thickened.
- Let the mixture cool completely.
- Add 1 qt of mayonnaise.
- Mix well, put in jars, and seal.
